How to Make It
Roast the cauliflower with a little olive oil, salt and pepper at 220°C / 425°F until tender and golden around the edges. Save a few of the prettiest roasted florets for serving.
Meanwhile, gently cook the onion and garlic with a little olive oil until softened.
Add the roasted cauliflower, thyme and vegetable broth. Simmer for about 10 minutes, then blend until completely smooth.
