Cabbage doesn’t need much to become seriously good.
A little oil, your favorite seasonings and enough time in a hot oven can turn simple cabbage into something completely different — tender in the center, with golden, caramelized edges.
And then comes the sauce.
A creamy lemon-herb tahini that takes the roasted cabbage from simple side dish to something you’ll actually want to make again.
What You Need for the Roasted Cabbage
Cabbage
A little olive oil
Salt
Black pepper
Your favorite seasonings
Paprika, garlic, cumin or chili can all work here — use the flavors you enjoy.
How to Roast the Cabbage
Preheat the oven to 425°F / 220°C.
Cut the cabbage into thick wedges, keeping part of the core attached so the pieces hold together while roasting.
Arrange the cabbage on a baking sheet.
Lightly coat with olive oil and season with salt, black pepper and any additional spices you like.
Roast for approximately 25–35 minutes, turning if needed, until the cabbage is tender and the edges are deeply golden and slightly caramelized.
Don’t be afraid of those darker edges — that’s where a lot of the flavor comes from.
Creamy Lemon-Herb Tahini Sauce
The cabbage is already good on its own, but this sauce is what brings everything together.
You’ll Need
Tahini
Fresh lemon juice
Very cold water
Salt
Finely chopped fresh herbs
Parsley, dill or a combination of fresh herbs works well.
How to Make It
Add the tahini and lemon juice to a bowl and stir.
The tahini may become very thick at first — that’s normal.
