Protein, carbs and vegetables are words we hear all the time when people talk about lunch. But they don’t all describe the same thing.
Vegetables, fruit, grains and legumes are foods or food groups. Protein and carbohydrates are nutrients found inside foods. Fiber is a type of carbohydrate.
That distinction explains why one food can belong to a food group while also providing several different nutrients.
A sweet potato is a vegetable, but it also contains a significant amount of carbohydrate. Beans are legumes that contain carbohydrates, fiber and plant protein. A cucumber is also a vegetable, but its nutritional profile is very different from that of a sweet potato.
Food rarely fits into one nutrient box.
What Does “Carbs” Actually Mean?
Carbohydrate is a broad nutrient category that includes sugars, starches and fiber.
Carbohydrates are found in many different foods, including grains, fruit, legumes, starchy vegetables and some dairy products.
Bread, fruit, sweet potatoes, beans, rice and oats all contain carbohydrates. In everyday conversation, people often simply call foods like these “carbs,” even though each food contains much more than carbohydrate alone.
Their nutritional profiles can be very different. Some contain more fiber, some also provide protein, and each can contain different vitamins, minerals and other nutrients.
So describing a food as “a carb” only tells part of the story.
Is Sweet Potato a Vegetable or a Carb?
A sweet potato is a vegetable.
It is specifically a starchy vegetable, which means that starch makes up a more significant part of its carbohydrate content than it does in many non-starchy vegetables.
This is why sweet potato and cucumber can both be vegetables while being very different nutritionally.
Cucumber contains relatively little carbohydrate, while sweet potato contains considerably more.
The words “vegetable” and “carbohydrate” are not competing labels. One describes the type of food, while the other describes a nutrient found within it.
What About Fruit?
Fruit is another good example of why food and nutrients shouldn’t be treated as the same thing.
Fruit is a food group, and most fruits naturally contain carbohydrates, largely in the form of naturally occurring sugars, along with varying amounts of fiber.
An apple, berries, a banana and an orange all contain carbohydrates, but they do not have identical nutritional profiles.
Calling fruit “a carb” can therefore be technically understandable in casual conversation, but it doesn’t describe everything the food contains.
Where Does Fiber Fit In?
Fiber is not a separate food category.
It is a type of carbohydrate found naturally in many plant foods, including fruit, vegetables, legumes, whole grains, nuts and seeds.
This means a food can contain starch, sugars and fiber at the same time.
For example, sweet potato contains starch as well as fiber. Beans contain carbohydrates that include starch and fiber, while also providing plant protein.
That is why “carbohydrates” and “fiber” should not be treated as two completely unrelated categories.
Fiber is part of the carbohydrate family.
Are Beans Protein or Carbs?
Beans are another food that doesn’t fit neatly into a single nutrient label.
Beans, chickpeas, lentils and dried peas are legumes. They contain carbohydrates, including fiber, and they also provide plant protein.
So when someone describes beans as a protein source and someone else describes them as a carbohydrate-containing food, both can be talking about real parts of the same food.
The food itself hasn’t changed. It simply contains more than one nutrient.
Protein Works the Same Way
Protein is also a nutrient rather than a complete description of a food.
Eggs, chicken, fish, yogurt, tofu, beans, lentils, nuts and seeds can all contain protein, but they do not have identical nutritional profiles.
Some protein-containing foods also contain carbohydrates. Some contain fat. Plant foods may also contain fiber.
This is another reason food labels such as “protein food” or “carb” are useful as shorthand, but they don’t describe everything inside the food.
What Does This Look Like in a Lunch?
Consider three very different lunches.
Chicken, rice and vegetables contain a fairly obvious mix of foods: chicken contributes a large amount of protein, rice contains mostly carbohydrate, and the vegetables contribute their own combination of carbohydrate, fiber and micronutrients.
A lentil and quinoa bowl looks different nutritionally because the roles overlap. Lentils contain carbohydrates, fiber and plant protein, while quinoa contains carbohydrates and also some protein.
A cold pasta salad with tuna and vegetables is different again. Pasta contains carbohydrates, tuna provides protein, and the vegetables contribute fiber and other nutrients.
The foods change, but the important point stays the same: an ingredient does not have to represent only one nutrient.
