These three colorful toast recipes turn good bread and simple ingredients into satisfying meals with protein, fresh vegetables, herbs and creamy spreads. Try avocado egg toast with lime and cilantro, a sabich-inspired toast with roasted eggplant, hummus, egg and tahini, and a fresh Caprese toast with tomato, mozzarella, basil and balsamic. These easy Mediterranean toast ideas are perfect for quick lunches, brunch recipes, light meal planning, appetizer-style meals and simple everyday cooking when you want something fresh, colorful and easy to put together.

And I don’t mean a lonely piece of bread with a little spread on top. With the right combination of ingredients, one or two slices of toast can bring together the main elements of a meal: carbohydrates from the bread, protein, plenty of fresh vegetables, and flavorful fats

The best part? It can still feel light, colorful and incredibly easy to put together.

These three ideas use the same simple formula, but each one has a completely different personality.

The HEALTIPS Toast Formula

When I build a toast that is meant to feel like a real meal, I usually think about four things:

1. Start with good bread
Whole-grain, seeded, rye, sourdough or a rustic country loaf all work beautifully. Toasting it well is important, especially when you are adding juicy vegetables or creamy spreads.

2. Add a source of protein
Eggs, cheese, hummus and other simple ingredients can turn toast from a quick snack into something much more substantial.

3. Bring in something fresh
Tomatoes, cucumber, onion, herbs, greens or even fruit can completely change the personality of the toast.

4. Finish with flavor
Lime, lemon, tahini, balsamic glaze, herbs, chili or a drizzle of olive oil can be the small detail that brings everything together.

You don’t need dozens of ingredients. You just want a few different textures and flavors working together.


🥑 Avocado Lime Toast with Fried Egg

Chunky avocado lime spread with cucumber, red onion and fresh cilantro in a simple ceramic bowl.


This one starts with a chunky avocado spread rather than plain mashed avocado.

For the Avocado Spread

  • 2 ripe avocados

  • ½ small cucumber, finely chopped

  • 2–3 tablespoons finely chopped red onion

  • A small handful of fresh cilantro

  • Juice of 1 lime

  • 1 teaspoon olive oil

  • Chili flakes or finely chopped chili, optional

  • Salt and black pepper

Mash the avocado roughly, leaving some texture.

Add the cucumber, red onion, cilantro, lime juice, olive oil, salt and pepper. Mix gently.

To Build the Toast

Toast two slices of dark whole-grain or seeded bread until crisp.

Spread generously with the avocado mixture and top each slice with a fried egg.

Finish with black pepper, cilantro, microgreens or a little chili.

Why It Works

The bread provides the carbohydrate base, the egg brings protein, and avocado adds creamy richness. Cucumber, onion, cilantro and lime keep everything fresh and bright.

And the contrast is what makes it so good: crispy toast + creamy avocado + warm egg + fresh lime.

HEALTIPS Tip: Keep the avocado spread slightly chunky. The little pieces of cucumber and avocado give it much more texture than a completely smooth spread.


🍆 Sabich-Inspired Toast

Sabich already has almost everything you could want in one bite, so turning those flavors into an open-faced toast just makes sense.

Open-faced sabich toast with hummus, roasted eggplant, sliced hard-boiled eggs, chopped vegetables, fresh herbs and tahini.


You’ll Need

  • 2 slices sourdough or whole-grain bread

  • Hummus

  • Roasted eggplant slices

  • 1–2 hard-boiled eggs, sliced

  • Chopped tomato

  • Chopped cucumber

  • A little red onion

  • Fresh parsley

  • Tahini

  • Amba, optional

Toast the bread and spread a generous layer of hummus over each slice.

Add roasted eggplant, sliced egg, tomato, cucumber and a little red onion.

Drizzle with tahini and finish with fresh parsley.

If you love traditional sabich flavors, add a little amba too.

Why It Works

This toast naturally combines several different elements: bread for carbohydrates, egg and hummus for protein, plenty of vegetables, and tahini for richness.

But nutritionally balanced or not, the real reason it works is the flavor.

The roasted eggplant is soft and savory, the vegetables are fresh, the hummus and tahini are creamy, and the bread underneath stays crisp.

It is basically sabich in brunch form.


🍅 Caprese Toast with Mozzarella, Tomato & Balsamic

Sometimes the simplest combination is the one that looks and tastes the most impressive.

You’ll Need

  • 2 slices rustic bread or sourdough

  • 1 ripe tomato, sliced

  • Fresh mozzarella, sliced

  • Fresh basil leaves

  • Extra virgin olive oil

  • Balsamic glaze

  • Salt and black pepper

Toast the bread until golden and crisp.

Layer the tomato and mozzarella over the bread and tuck fresh basil leaves between the slices.

Finish with a little olive oil, black pepper and a light drizzle of balsamic glaze.

Why It Works

The bread creates the base, mozzarella brings protein and creaminess, and fresh tomatoes add color, juiciness and freshness.

Basil and balsamic do the rest.

There is no complicated technique here — which is exactly the point.

When a recipe only has a few ingredients, good tomatoes, fresh basil and mozzarella can make a huge difference.


A Better Toast Is All About Contrast

One thing all three recipes have in common is contrast.

Crispy + creamy
Toast with avocado, hummus or mozzarella.

Warm + fresh
Egg or roasted eggplant alongside fresh vegetables and herbs.

Rich + acidic
Avocado with lime.
Tahini with fresh salad.
Mozzarella with tomato and balsamic.

Sometimes when food feels a little boring, the answer isn’t adding five more ingredients.

It might just need something crunchy, something fresh or a little acidity.


Make It Your Own

Once you understand the basic idea, you barely need a recipe.

Choose one from each group and build your own:

Bread: whole grain, rye, sourdough, seeded bread, ciabatta
Protein: eggs, hummus, mozzarella, ricotta, chicken
Fresh: tomato, cucumber, radish, greens, herbs
Creamy: avocado, hummus, tahini, Greek yogurt
Finish: lemon, lime, balsamic, chili, seeds, herbs

It is also a great way to use small amounts of ingredients already sitting in the refrigerator.

Half an avocado.
A leftover roasted vegetable.
A few tomatoes.
One boiled egg.

Suddenly, they are lunch.


Simple Food Can Still Feel Special

One of my favorite things about meals like these is the presentation.

The recipes themselves are incredibly simple, but put them on a beautiful plate or wooden board, add a few colorful vegetables, and suddenly breakfast at home feels a little more like brunch at a café.

You absolutely do not need special serving pieces to make good food.

But if you enjoy the presentation part of cooking as much as I do, little details can make the whole process more fun.

A Few Little Things That Make Brunch Feel Special
